Chicken Salad
I made this chicken salad for the first time andI have to admit... it was just "ok". I added avocados and I think it helped a little bit. It just seemed blah to me. Maybe next time I'll add grapes and nuts. :)
Try this one.I believe it came from Martha Stewart.And I add seedless purple grapes.Good stuff! :)
Chicken Salad
6 cups cooked diced chicken (about 4 breasts) 1/2 cup minced onion 1/2 cup finely minced celery 6-8 tsp lemon juice 3/4 c mayonnaise 3 tsp dijon mustard salt to taste pepper to taste hot sauce (optional)
In a large bowl combine all ingredients well .Refrigerate for a few hours.Hot sauce is optional,but I always add a few drops.

I dont like mustard in mine. I do use pecans, red grapes (or mango), and celery. And now I want chicken salad for lunch

i made chicken salad the other day and added a little curry powder and raisins and it gave it a great kick.
