Menu Plan Monday


I'm getting organized and am planning our weekly menus. Here it goes (let's see if I can stick to it). Im only planning dinner since we eat cereal for breakfast and never know what lunch will bring.

Monday
Lentils with spinach & basil
Salad

Tuesday
Mushroom rice
Veggies

Wednesday
Taco salad

Thursday
Chicken with mushroom sauce over rice
Veggies

Friday
Date night - we're eating out!

Saturday
Sauteed carrots
Garlic bread

Sunday
Leftovers

Nicole,this menu looks fantastic.Here is the recipe for garlic rice.TTYL!

GARLIC RICE
2 tablespoons olive oil
1 medium onion, chopped fine
3-4 garlic cloves, minced fine
1 cup long grain rice
2 cups chicken broth
1/2 teaspoon dried thyme
1 bay leaf
1/4 cup parsley, chopped

Put the oil in a skillet and saute the onions & garlic until golden.
Add rice, broth, thyme & bay leaf Bring to a boil uncovered, turn heat to low cover and simmer about 25 minutes or until the liquid is absorbed, give a little stir after 15 minutes Remove bay leaf & stir in the parsley.

Okay Nicole, I want to go to England, forget eating out I'll eat every night at your house, well I really want to visit Gordon Ramsey's place too. I can dream can't I? Well hopefully you will be back stateside before I ever make it to England.
